Chocolate-Chip Oatmeal Cookies

My oven is feeling lonely. We separated approximately 4 months ago, but I'm ready to rekindle the relationship. I'm going to give my oven some lovin' today and bake chocolate-chip oatmeal cookies!

Preheat your oven to 375 degrees. Grab a large mixing bowl. Take two sticks of unsalted butter, softened but not melted, and throw in the bowl.

Add your sugars, brown and regular, cream together using your mixer for approximately 2 minutes.

Add salt and baking soda along with two eggs. Mix again.

Add your flour and vanilla. Mix until incorporated, don't over-mix. Are you catching onto the theme? Add and mix, add and mix, etc.

Pour in your oats. Mix it baby, mix it.

Finally, pour in those delectable chocolate chunks and mix by hand.

Form dough balls. I like large and in-charge cookies, so mine are approximately 1/4 cup of dough per ball. Plop on the pan and bake until the outside begins to brown and the inside is still ooey gooey, approximately 12-14 minutes.

Pour yourself a glass of milk and enjoy!

Recipe
1/2 pound (2 sticks) unsalted butter, softened
1 cup of brown sugar
3/4 cup sugar
1 tsp salt
1 tsp baking soda
2 eggs
1 tsp vanilla
2 cups flour
2 cups old-fashioned oats (not instant)
2 cups chocolate chips (I used Ghiradelli 60% cacao, baking chips)

Follow step-by-step directions above. Bake at 375 degrees for 12-14 minutes. Makes 18 large cookies.
